An artist’s impression of what the interior of Eden Mill’s distillery and visitor centre will look like. These are a few of the whisky distilleries in and not far from St Andrews that you can get to between your hours spent on the links: Launching the brand in 2012, Paul anticipates around 36,000 visitors through the new premises’ doors in its first year, with 100,000 estimated by year three.

Travel further afield into the Highlands and you’ll find the only distillery in Angus County, home to Glencadam Whisky. Having mastered the dual crafts of distilling and patience, Glencadam offers Single Malt Whiskies that have been aged from 10 to 25 years. Made from just three ingredients – malted barley, Highland spring water, and yeast – all Glencadam whiskies are bottled at 46% volume, which prevents the finished product from looking cloudy when cooled. The smooth, caramel colour of the final product is all natural.

Kingsbarns Distillery use Fife grown barley and water from an aquifer 100m below the distillery, filling 33 oak casks a week. The whisky must mature for 3 years and a day before it can be called Single Malt Whisky, so the first drams of Kingsbarns have not long matured; take a tour of this distillery and you’ll be one of the first to have a taste of what Kingsbarns describes as a ‘light, fresh and elegantly dry’ whisky. With a prominent year lined up for St Andrews next year with the 150th Open Golf Championship taking place in July 2022, Paul Miller, co-founder of Eden Mill, is determined to see the visitor centre open its doors by late spring next year. Introducing the 2023 Release of our Art of St Andrews Single Malt Collection. The first in the collection to be lightly peated, this limited edition bottling was inspired by St Andrews, Guardbridge and the surrounding area and its design was created by local illustrator, Jill Calder. We arrive in St Andrews at lunchtime and after a short familiarisation tour you will have a minimum of two-and-a-half hours to explore this compact and historic town. St Andrews is internationally renowned as the 'Home of Golf' and you will have plenty of time to see the famous Old Course - a place of pilgrimage for golfers of all abilities. And the history at Lindores isn’t just about whisky, the Abbey has a real place in many tales of Scotland’s past. Lindores Abbey was a meeting place for Knights and friends of Robert the Bruce, it was a place Scottish princes and kings toured to, and it gave shelter as some of the earliest Acts of Parliament were signed.

Our first stop is only a short drive outside Edinburgh - the magnificent Forth bridges at South Queensferry. There has been a crossing here since the 11th century when Queen Margaret established a ferry service to transport pilgrims from Edinburgh to Dunfermline Abbey and St Andrews. Upon opening in 1890 the Forth Rail Bridge was the largest steel structure in the world and is one of the major engineering achievements of the Victorian age. He saw several companies who were not based in his home town capitalise on the international reputation of St Andrews, and more often than not, they were, at best, a mediocre drink. He wanted to offer a range of whiskies where the quality of the liquid in the bottle was the only important thing, and the 'branding' was simple and elegant, without a reference to golf!
