Having tried the new make we were already predicting a wonderful forecast, and when we tried Chapter 6 we were blown away. The sweetness has flavours of fresh, juicy fruits, including peaches, oranges and something a little more tropical tasting. The survey found there are currently 38,000 casks of English Whisky maturing in distillery warehouses with an estimated 50,000 casks expected to be laid down by distilleries by the end of 2024. Oloroso and Pedro Ximénez sherries have been used to season some casks used to mature the whisky and they have given the spirit a full array of sherried oak flavours, from chocolate coated raisins and burnt orange to Christmas pudding spices and sweet, syrupy ginger. Originally bursting onto the scene with Forest gin (the only gin to have been awarded two separate double-gold medals at the San Francisco World Spirit Awards), the firm is now onto its eleventh whisky blend.

Alongside this whisky the distillery has also been experimenting with various cask finishes, including some that had previously contained the Spanish sweet wine Moscatel. The four copper plates gently quadruple-distil the spirit, ensuring maximum contact with the developing vapours and that all impurities are removed. As for the English Whisky Guild’s evolution, it will require consensus on batch versus continuous distillation, using pot or column stills, and whether to insist on 100% English grains, which could make life difficult for peated whisky producers. The distillery’s releases, like the Spirit of the Underground series, emphasize a strong design aesthetic: Co-founder Ewelina Chruszczyk creates the eye-catching Bimber labels and tubes in-house, giving the husband and wife team greater agility than with a design agency to manage their need for distinctive packaging, as Bimber releases each single cask as a separate limited release.
