Fermenting at cooler temperatures allows the fruit flavours to be nurtured and enables retention of varietal characteristics. Please note though, that local deliveries may take a day or two longer as it depends which route we are taking or have just been on. For off shore and some Highlands destinations we will most likely use Parcelforce or Royal Mail and it may take a day or two longer to reach you. A touch of spicy oak and chocolate add extra depth while fine beads deliver a refreshing finish and give the wine excellent length. The fruit for this wine was picked in the cool of the night and transported directly to the winery to be crushed, de-stemmed and immediately clarified.The fruit was crushed and de-stemmed and selected parcels were fermented on French and American oak prior to blending.
