Baileys Strawberries and Cream Liqueur 70cl

I obviously love to bake with Baileys, and this is a straight up new version of my regular no-bake Baileys cheesecake, but much more up to date. The older one does need an update (especially on the photos because they’re just awful) but I felt like this particular strawberries and cream beauty needed a post of its own. The Frozen Strawberry Mudslide is a boozy treat made with Bailey’s Strawberries and cream, vodka, coffee liqueur and strawberry ice cream topped with whipped cream, a chocolate drizzle and a chocolate covered strawberry garnish! I figured, with the help of my lovely Facebook followers, that Baileys would be a delicious flavour for a Christmas cheesecake – I don’t know about anyone else, but there is always a bottle of Baileys around at my Christmas events, and this is a delicious way to use some up!

Yes. That’s right. BAILEYS CHEESECAKE! I can explain why there is another cheesecake recipe – I had oodles and oodles of requests for a Christmas/Baileys cheesecake so how on earth could I disappoint?! Plus – I made this just in time for my Mums birthday, so it doubled up as her birthday cake! See – the perfect excuse. Recipe I did struggle to let this cheesecake set properly, because it literally just tasted so good. The mix itself, tastes like strawberry milkshake, and its like a dreamy pink mousse so its hard to resist. It does of course set once in the fridge, but you could try and make a mousse version and I’m sure it’ll still be utterly delicious.Reduce the cream cheese, and add in more double cream and you’ll have a winner! This cheesecake does not use chocolate to help it set – I tried it a couple of times with chocolate in, but I felt like it overpowered the flavour of the baileys, and drizzling the chocolate on top worked far better! Simple! I used mascarpone in this recipe as I thought it went really nicely with the Baileys. You can of course use full fat cream cheese if you would prefer but, like always, it must be FULL FAT! This cheesecake mixture is so silky and so smooth I am just completely obsessed with it! Bailey's Irish Cream - I love the flavor of classic Bailey's Irish Cream and that's what I like to keep on hand, but you can also use the Bailey's Strawberries and Cream!!

Once the chocolate has set up, melt down some of the white chocolate and pour into a ziploc bag. Cut a tiny piece off the corner of bag and drizzle the chocolate over each strawberry. Vanilla Vodka - I like using vanilla vodka for an bit of extra vanilla flavor! But you can also just use your favorite plain vodka (my favorite is Tito's)! White rum would also be a good substitute! You might also like these strawberries and cream cupcakes or these strawberry basil mojitos! Jump to: I recommend using the Bailey’s Strawberries and Cream. However, if you cannot find it or already have regular Bailey’s on hand, then use the regular. If using regular Bailey’s, I do recommend adding in a few fresh strawberries to the blender to get that delightful strawberry flavor in this shake. I did my usual sort of decoration for this, but because it looks quite similar to my no-bake white chocolate & strawberry CheesecakeI didn’t want to add a drizzle of white chocolate or anything. I’m glad I didn’t, as I think the swirls of cream, fresh strawberries, and freeze dried strawberries I had enough impact as it was. I honestly think this cheesecake just looks delicious, and if you’re a fan of Baileys, and strawberries, you will utterly adore the taste as well. I did not have Valentine’s Day in mind when I first grabbed the ingredients for this Frozen Strawberry Mudslide but it is pretty much the perfect holiday drink just in time with one week until V-day! I see this pretty boozy shake as the perfect after dinner treat to share with a friend or spouse. I want to curl up in a blanket on the couch on sip on this now and ignore the freezing temperatures outside! I can’t be the only who does this… shakes are for year round, especially the adults only kind.Frozen Strawberry Mudslide is basically a strawberry shake with added alcohol. You can faintly taste the coffee liquor just giving this drink a bit more depth of flavor. Chocolate drizzle is added for that lovely strawberry and chocolate combo that balances this mudslide out.
