If you’re just looking to put a good edge on some normal knives, stop here. If you’re looking to put a “slice through a phonebook” edge on CPM Rex 121, look elsewhere. Once the guide rods are firmly in place, it’s time to attach the sharpening stone. The Lansky Knife Sharpener usually includes several sharpening stones with different levels of roughness, from rough to fine.

The frequency of sharpening depends on how often you use your knives and the cutting tasks involved. For most kitchen knives, sharpening every few weeks is sufficient. Outdoor and hunting knives may require more frequent sharpening, especially after heavy usage. What is the difference between honing and sharpening with the Lansky Knife Sharpener? The Lansky kit comes in a square plastic box with a snap closure on the front for use on the go, if you’re so inclined. Before you begin sharpening, apply a few drops of honing oil onto the surface of the rough grit stone. Starting from the knife’s base, near the handle, gently push the stone away from you along the blade’s edge. Use light pressure for each stroke to avoid unbalanced sharpening.
